In un pentolino, porta a ebollizione 40 ml di acqua con 10 g di yogurt greco, un pizzico di sale e 5 g di eritritolo.

Aggiungi 25 g di farina di avena mescolando fino a ottenere un impasto omogeneo. Lascia intiepidire per 5 minuti.

Unisci 1 uovo e mescola fino a completo assorbimento. Trasferisci l'impasto in una sac à poche.

Su una teglia rivestita di carta forno, forma un bastoncino di circa 10 cm. Cuoci in forno preriscaldato a 200°C per 20 minuti.

Spegni il forno e lascia asciugare per 5 minuti con lo sportello leggermente aperto. Raffredda completamente.

Prepara la crema frullando 30 g di pistacchi con 80 g di yogurt greco 0%, 5 g di eritritolo e 10 g di aroma di pistacchio fino a ottenere una consistenza cremosa.

Affetta l'éclair a metà, riempi con la crema al pistacchio e aggiungi i lamponi freschi prima di richiudere.
