Method

In una ciotola, unire 45g di yogurt greco 0%, 20g di farina di mandorle, 1 uovo, 2g di eritritolo e un pizzico di sale. Mescolare bene fino ad ottenere un composto omogeneo.

Trasferire l'impasto in una sac à poche e formare un bastoncino di circa 10 cm su una teglia foderata con carta da forno.

Cuocere in forno preriscaldato a 200°C per 15 minuti, fino a doratura. Lasciare raffreddare.

Per la crema, scaldare 50ml di yogurt greco 0% con 5g di caffè solubile. Versare il composto caldo su 30g di cioccolato fondente 85% tritato e mescolare fino a ottenere una crema liscia.

Riempire l'éclair raffreddato con la crema al cioccolato e caffè.

Spolverare con cacao amaro in polvere prima di servire.
