Versa 500 ml di acqua in un pentolino e porta a ebollizione. Aggiungi il cocco disidratato e mescola bene, quindi spegni il fuoco e lascia riposare per 1 ora coperto.

Posiziona un colino a trama fine sopra una ciotola e versa il composto. Spingi con il dorso di un cucchiaio per estrarre tutto il liquido.

Riscalda i rimanenti 100 ml di acqua e versala sul cocco già filtrato nel colino, mescolando delicatamente per una seconda estrazione.

Accendi il forno a 100°C e ricopri una teglia con carta forno.

Trasferisci il cocco filtrato sulla teglia, distribuendolo in strato uniforme e sottile.

Asciuga in forno per 1 ora e 45 minuti a 100°C, mescolando ogni 20 minuti con una spatola per garantire un'essiccazione uniforme.

Estrai dal forno e lascia raffreddare per 15 minuti a temperatura ambiente.

Metti il cocco essiccato in un mixer o robot da cucina e frulla per 1-2 minuti fino a ottenere una polvere fine e omogenea.
