Pulisci delicatamente i fiori di zucca, rimuovi gli stami e asciugali con carta assorbente.

Trita finemente aglio, prezzemolo e basilico, quindi trasferiscili in una ciotola.

Aggiungere alla ciotola la ricotta e il Parmigiano Reggiano, mescola bene fino a ottenere un composto omogeneo e cremoso.

Taglia asparagi e carote in piccoli dadini, rosola lo speck magro in padella con un filo d'olio a fuoco medio per 2 minuti, quindi aggiungi le verdure e cuoci per altri 3 minuti; lascia raffreddare.
