Preriscalda il forno a 200°C e fodera una teglia con carta forno.

In una padella, scalda un cucchiaio d'olio e aggiungi l'aglio tritato; dopo un minuto, unisci gli spinaci e cuoci finché non si appassiscono.

In una ciotola, mescola la ricotta, l'uovo, il parmigiano, sale, pepe e noce moscata. Aggiungi gli spinaci cotti e mescola bene.

In un'altra ciotola, unisci la farina integrale con un pizzico di sale e un cucchiaio d'olio, poi aggiungi acqua quanto basta per ottenere un impasto omogeneo.

Stendi l'impasto su carta forno in un disco di circa 15cm, distribuisci il ripieno lasciando un bordo, e chiudi con un'altra porzione di impasto, sigillando bene i bordi.

Spennella la superficie con un po' d'olio e cuoci in forno per 20 minuti o fino a doratura.
