Scaldare l'acqua tiepida in una ciotola e stemperare il lievito con un pizzico di zucchero, lasciare riposare 5 minuti fino a quando forma una schiuma.

In una ciotola grande versare la farina integrale, aggiungere il lievito attivato e 10 ml di olio extravergine di oliva, mescolare e impastare a mano per 8-10 minuti fino a ottenere un impasto elastico e liscio.

Aggiungere il sale e continuare a impastare altri 2 minuti, quindi mettere l'impasto in una ciotola leggermente unta, coprire con pellicola e lasciare lievitare per 45 minuti a temperatura ambiente fino al raddoppio del volume.

Ungere una teglia quadrata (20x20 cm) con il rimanente olio extravergine di oliva e preriscaldare il forno a 210°C.

Trasferire l'impasto sulla teglia e stenderlo uniformemente con le dita umide, creando i classici buchi premendo delicatamente con i polpastrelli.

Distribuire la ricotta magra in piccoli cucchiai sulla superficie della focaccia, poi cospargere con l'uva nera e i rametti di rosmarino fresco.

Cospargere con fiocchi di sale marino e infornare a 210°C per 25-28 minuti fino a dorata in superficie.

Estrarre dal forno, lasciare raffreddare 10 minuti sulla teglia, quindi trasferire su una griglia per completare il raffreddamento prima di servire.
