Method

In una ciotola a bagnomaria, sciogliere i marshmallows con l'acqua a fuoco basso, mescolando delicatamente per 3-4 minuti fino a ottenere una crema omogenea.

Togliere dal calore e aggiungere subito l'olio di cocco, mescolando bene.

In una ciotola separate, setacciare la polvere proteica insieme allo zucchero di canna e al sale.

Versare il composto di marshmallows nella miscela secca, incorporando lentamente con un cucchiaio di legno fino a formare un impasto morbido ma non colloso (aggiungere pochi millilitri d'acqua se necessario).

Trasferire l'impasto su un piano da lavoro leggermente inumidito e lavorare con le mani per 2-3 minuti, incorporando delicatamente altri 5 g di zucchero a velo se l'impasto risulta troppo umido.

Avvolgere il panetto in pellicola trasparente e lasciar riposare per 12 ore in luogo asciutto a temperatura ambiente (non in frigorifero).

Riprendere il fondente, lavorarlo brevemente con le mani per renderlo malleabile, aggiungere colorante se desiderato.

Stendere con un mattarello tra due fogli di carta da forno fino a 5 mm di spessore e ritagliare le forme desiderate con stampini.
