Preparare la pasta sfoglia integrale: in una ciotola mescolare farina integrale (180 g), burro chiarificato a pezzetti e sale. Aggiungere acqua fredda gradualmente fino a formare un impasto coerente. Avvolgere in pellicola e riposare in frigorifero 15 minuti.

Stendere l'impasto su piano infarinato in rettangolo di 60x20 cm. Piegare in tre parti, ruotare di 90° e riposare 20 minuti. Ripetere la piegatura e il riposo altre 2 volte.

Preriscaldare il forno a 190°C. Rivestire una placca con carta forno.

Dividere la pasta in due porzioni e stenderle in due cerchi (diametri 26 e 24 cm). Posizionare il cerchio più piccolo sulla placca, forellarlo con una forchetta.

Distribuire le ciliegie fresche lavate su tutta la base, lasciando 2 cm dal bordo. Cuocere 8 minuti a 190°C.

Nel frattempo, tritare finemente i pistacchi e mescolarli con la polvere proteica, il miele e l'essenza di vaniglia.

In una ciotola montare gli albumi a neve morbida. Incorporare delicatamente la miscela di pistacchio, l'olio di cocco e il latte scremato.

Estrarre la base dal forno, distribuire la crema al pistacchio sulle ciliegie in modo uniforme.

Coprire con il disco più grande di pasta, sigillare bene i bordi. Spennellare leggermente con albume diluito.

Cuocere 25-28 minuti a 190°C fino a doratura leggera. Lasciar raffreddare 10 minuti prima di servire.
