Method

Lavare i gamberi e i calamari sotto acqua fredda corrente, asciugarli con carta assorbente. Mondare i calamari eliminando la pelle e l'osso interno, tagliarli ad anelli di circa 1 cm.

Tritare finemente il prezzemolo e il coriandolo insieme con un coltello affilato, quindi trasferire in una ciotola.

Aggiungere al tritato l'aglio affettato sottilmente, la scorza di limone grattugiata e il peperoncino rosso ridotto in pezzi piccoli.

In una padella antiaderente riscaldata a fuoco medio, versare l'olio extravergine, quindi aggiungere il composto di aromi. Rosolare per 1 minuto affinché i profumi si sprigionino.

Sfumare con il vino bianco e aggiungere la paprika affumicata, mescolando bene. Lasciar ridurre il vino per 2 minuti.

Aggiungere l'acqua filtrata e portare a ebollizione lieve.

Inserire i gamberi nella padella e cuocere per 3 minuti fino a che non diventano rosa corallo.

Aggiungere i calamari e proseguire la cottura per altri 3 minuti, mescolando delicatamente.

Spegnere il fuoco, salare leggermente e finire con il succo di limone fresco appena spremuto.

Trasferire in piatto bianco e servire immediatamente, distribuendo equamente gamberi e calamari con la salsa speziata.
