Tostate leggermente le nocciole in padella antiaderente a fuoco medio per 3-4 minuti, mescolando frequentemente fino a profumo intenso. Trasferite in un piatto e lasciate raffreddare.

Versate le nocciole fredde in un mixer potente e frullate per 8-10 minuti, fermatevi ogni 2 minuti per raschiare le pareti. Le nocciole rilasceranno progressivamente i loro oli naturali trasformandosi in crema: continuate fino a consistenza liscia e cremosa.

Aggiungete il cacao amaro setacciato e frullate per altri 30 secondi a velocità medio-alta.

Incorporate le proteine in polvere e il sale, frullate per 20 secondi, poi raschiare e frullare altri 10 secondi.

Con il mixer ancora acceso a velocità bassa, versate il miele e l'olio di cocco fuso leggermente, frullando fino a amalgamamento perfetto (circa 15 secondi).

Raschiate la crema con una spatola in un contenitore di vetro a chiusura ermetica. Se desiderate, grattugiate un pizzico di vaniglia in superficie e mescolate delicatamente.
