Method

In una ciotola capiente, versare l'acqua tiepida (circa 38-40°C) e aggiungere il lievito di birra e il miele; mescolare bene con una frusta per 30 secondi fino a dissoluzione completa.

In una seconda ciotola, setacciare insieme la farina tipo 0, la farina di ceci, il sale e la farina di psyllium se utilizzata.

Versare il composto di acqua e lievito nella ciotola con le farine e iniziare a impastare con le mani, lentamente e dolcemente, per 5 minuti fino a ottenere un composto ruvido.

Aggiungere l'olio extravergine di oliva a filo, continuando a mescolare per altri 3 minuti.

Incorporare la ricotta magra (precedentemente passata con una forchetta per renderla cremosa) poco alla volta, mescolando con decisione per 2 minuti fino a ottenere un impasto omogeneo e elastico.

Trasferire l'impasto in una zuppiera pulita leggermente unta con olio e formare una palla liscia.

Coprire la zuppiera con un canovaccio umido o pellicola trasparente e lasciare lievitare a temperatura ambiente (20-22°C) per circa 2-2,5 ore, finché l'impasto non raddoppia di volume.
