Preparare la maionese light: in una ciotola, sbattere l'uovo intero con il succo di limone e il sale per 2 minuti fino a ottenere un composto omogeneo.

Versare l'olio d'oliva in modo lentissimo, goccia dopo goccia, continuando a montare energicamente con una frusta, per evitare che l'emulsione si rompa. Una volta che la maionese inizia a ispessirsi, l'olio può essere versato più velocemente.

Regolare di sale e pepe a piacere. Trasferire in frigorifero per 10 minuti.
