Pelare la carota e il sedano, tagliarli a pezzetti medi insieme a metà cipolla rossa. Disporre in una pentola capiente.

Aggiungere le lenticchie rosse secche e l'acqua fredda. Portare a ebollizione, poi ridurre il fuoco e cuocere a fuoco lento per 20-25 minuti, finché le lenticchie sono tenere ma mantengono la forma. Scolare e lasciare raffreddare per 5 minuti.

Nel frattempo, pelare a vivo l'arancia con un coltello affilato, seguendo la curva del frutto. Staccare gli spicchi dalle membrane bianche e raccoglierli in una ciotola, conservando il succo.
