Method

In una pentola ampia, versare l'acqua e il vino bianco, aggiungere la cipolla spellata, 1 spicchio di aglio schiacciato e il polpo intero. Portare a ebollizione, quindi ridurre il fuoco e cuocere a fuoco medio per 35-40 minuti, finché il polpo non risulta tenero.

Negli ultimi 15 minuti di cottura del polpo, aggiungere le patate dolci tagliate in cubetti da 2 cm direttamente nel brodo.

Nel frattempo, preparare il condimento: tritare finemente l'altro spicchio di aglio e il prezzemolo fresco, trasferire in una ciotola e aggiungere l'olio extravergine, il succo di limone, un pizzico di sale e pepe. Mescolare bene fino a emulsionare.

Quando il polpo è tenero, trasferirlo in un tagliere con una schiumarola, lasciare raffreddare per 5 minuti, quindi tagliarlo in pezzi di 2-3 cm.

Scolare bene le patate dolci dal brodo di cottura (reservare il brodo per altri usi) e sistemarle in un'insalatiera capiente.

Aggiungere i pezzi di polpo alle patate, versare il condimento al limone e mescolare delicatamente fino a amalgamare bene. Assaggiare e correggere di sale e pepe se necessario.

Servire tiepida o a temperatura ambiente, con una spolverata di paprica dolce se desiderato.
