Riscaldare il latte a fuoco medio-alto in un pentolino insieme a scorza di limone e bastoncino di cannella per 5 minuti, poi spegnere e lasciare in infusione 15 minuti.

Sbattere delicatamente l'uovo intero con l'albume aggiunto e l'eritritolo fino a dissoluzione dello zucchero.

Aggiungere lentamente mezza tazza di latte caldo all'uovo, incorporando un po' alla volta.

Versare il composto di uova nel latte rimasto, aggiungere il pisco e mescolare bene.

Passare il custard attraverso un setaccio fine in una piccola pirofila monoporzione (200 ml).

Cuocere a 175°C per 12-15 minuti finché la crema risulta assestata ma ancora cremosa al centro; raffreddare in frigorifero per almeno 2 ore.
