Preriscaldare il forno a 175°C. Mescolare 20g di eritritolo con 15g di burro ammorbidito fino a ottenere una crema leggera. Aggiungere 15g di albume d'uovo e grattugia di limone, amalgamando bene.

In una ciotola, setacciare 25g di farina di mandorle, 15g di farina proteica vanilla, 3g di farina di avena, 0,5g di cannella e una punta di chiodi di garofano.

Incorporare gli ingredienti secchi nel composto cremoso, impastando fino a ottenere un impasto omogeneo e malleabile.

Dividere l'impasto in due parti: una base per il fondo e una per la lattice. Stendere la prima parte in una piccola teglia rettangolare (10x8cm).

Con la seconda parte, formare sottili bastoncini e disporli a lattice sulla base. Spalmare 30g di marmellata di lamponi tra la base e la lattice.

Cuocere per 15-18 minuti fino a doratura leggera della superficie. Lasciar raffreddare e tagliare in 2-3 porzioni.
