Prepara i ripieni: trita finemente i datteri, poi mescola con 5 g di miele, un pizzico di cannella e 1/2 cucchiaio di acqua di rose. Forma 13 palline compatte e riponi in frigorifero.

Trita le noci, unisci a 10 g di miele, cardamomo e 1/2 cucchiaio di acqua di rose. Forza 13-14 palline e raffredda.

Processa il pistacchio fino a granelle fini, amalgama con gli ultimi 10 g di miele e il resto dell'acqua di rose. Crea 13 palline e raffreddare.

Per l'impasto: lavora il burro chiarificato con lo zucchero fino a crema leggera; aggiungi i tuorli uno alla volta, poi l'acqua di rose.

Setaccia farina 00 e farina di mandorle, aggiungi il sale. Incorpora delicatamente al composto di burro fino a impasto omogeneo.

Avvolgi l'impasto in pellicola e riponi in frigorifero per 30 minuti.

Preriscalda il forno a 165°C. Rivesti due teglie con carta forno.

Dividi l'impasto in 40 pezzi da 10 g ciascuno. Appiattisci ogni pezzo in un disco sottile, posiziona una pallina di ripieno al centro.

Chiudi sigillando i bordi con le dita bagnate, poi compatta delicatamente in forma ovale regolare.

Posiziona i biscotti sulle teglie con 2 cm di distanza; puoi usare uno stampo da ma'amoul per il pattern tradizionale, oppure lascia la forma liscia.

Cuoci per 22-24 minuti finché non raggiungono una leggera doratura ai bordi.
