In una ciotola, setaccia 25g di farina di mandorle con 15g di eritritolo per eliminare i grumi.

In un'altra ciotola pulita, monta un albume d'uovo a neve ferma con un pizzico di sale e aggiungi lentamente 5g di dolcificante stevia fino a ottenere un composto lucido e consistente.
