Method

Sciogliere il lievito di birra nel latte di mandorla tiepido in una ciotola grande e lasciare riposare per 5 minuti.

Aggiungere la farina integrale, le proteine in polvere, l'olio d'oliva, il miele e il sale; mescolare fino a ottenere un impasto omogeneo.

Trasferire l'impasto su un piano di lavoro leggermente infarinato e lavorarlo per circa 5 minuti, fino a renderlo elastico.

Ungere una ciotola e mettere l'impasto, coprendo con un canovaccio. Lasciare lievitare in un luogo caldo per 30 minuti.

Preriscaldare il forno a 180°C e ungere una teglia quadrata.

Dopo la lievitazione, sgonfiare l'impasto e stenderlo in un rettangolo di circa 25x10 cm.

Arrotolare l'impasto dal lato corto e tagliare in 9 pezzi uguali.

Disporre i pezzi nella teglia preparata, con il lato tagliato rivolto verso l'alto.

Coprire e lasciare lievitare per altri 20 minuti.

Cuocere in forno per 25 minuti o fino a doratura.
