Method

In una ciotola, unire la farina di avena e la farina di ceci. Aggiungere l'uovo intero, l'albume, il sale e l'acqua, mescolando fino a ottenere un impasto omogeneo. Coprire e far riposare per 20 minuti.

Tritare finemente la cipolla e l'aglio. In una padella, far soffriggere la cipolla per 2 minuti. Aggiungere il pollo macinato e cuocere per 5-7 minuti fino a doratura. Condire con sale, pepe e mescolare bene.

Stendere l'impasto tra due fogli di carta forno fino a uno spessore di circa 2mm. Tagliare in quadrati di 5cm e riempire ciascun quadrato con un cucchiaio di ripieno, chiudendo a fagotto e sigillando i bordi.

Portare a ebollizione 500ml di acqua salata e cuocere i manti per 10-12 minuti, finché non galleggiano.

Preparare la salsa mescolando lo yogurt greco con l'aglio tritato.

Servire i manti caldi, guarnendo con la salsa di yogurt e un filo d'olio EVO riscaldato con peperoncino in polvere.
