Riscalda l'olio d'oliva in una padella grande a fuoco medio-alto e fai rosolare il manzo in porzioni fino a ottenere una crosticina su tutti i lati, circa 3-4 minuti per lotto. Trasferisci la carne in un piatto.

Nello stesso fondo, aggiungi la cipolla tritata e fai appassire per 2-3 minuti, poi unisci l'aglio e cuoci altri 30 secondi fino a profumo.

Reintroduttivi il manzo in padella, aggiungi le carote, il sedano, i peperoncini serrano affettati e un pizzico di curcuma. Mescola bene per 1 minuto.

Versa il brodo di manzo, l'acqua e i pomodori pelati. Porta a ebollizione, quindi copri e riduci il fuoco a minimo. Lascia stuffare per 35-40 minuti fino a che la carne diventi tenerissima.

Negli ultimi 5 minuti di cottura, aggiungi i peperoncini chipotle sminuzzati e la loro salsa; assaggia e regola di sale e pepe.

Togli dal fuoco, sprizza il succo di lime, mescola delicatamente e servi caldo, guarnito con coriandolo fresco e un filo di lime grattuggiato.
