Pelare il limone e l'arancia eliminando la parte bianca, quindi grattugiare le scorze finemente e spremere i succhi.

In una ciotola, mescolare le mele cotte tagliate a dadini, uvetta, ribes, mandorle tritate, spezie, succhi e scorze fino a ottenere un ripieno coeso. Aggiungere la proteina in polvere e amalgamare bene.

Preparare la pasta: in una ciotola unire farina integrale, sale e olio di cocco, sfregare con le dita fino a ottenere un composto sabbioso.

Aggiungere l'uovo e mescolare, poi incorporare l'acqua fredda poco alla volta finché non si forma un impasto compatto.

Avvolgere l'impasto nella pellicola e riposare in frigorifero per 30 minuti.

Preriscaldare il forno a 190°C. Preparare una teglia per 12 muffin o tartellette.

Stendere l'impasto tra due fogli di carta forno a uno spessore di 2-3 mm.

Ritagliare 12 cerchi di pasta (Ø 7 cm) con un coppapasta e foderare i gusci della teglia.

Con i ritagli di pasta, ritagliare 12 piccole decorazioni (stelle, cuori o cerchi).

Riempire ogni guscio con 1 cucchiaio di ripieno e coprire con la decorazione in pasta.

Spennellare leggermente con latte scremato.

Cuocere in forno a 190°C per 16-18 minuti fino a doratura leggera.

Lasciar intiepidire per 5 minuti nella teglia, quindi sformare su una gratella.
