Method

In un pentolino, versa 180ml di brodo vegetale e porta a ebollizione.

Aggiungi 120g di piselli freschi, il cipollotto tritato finemente e il succo di un limone. Cuoci per circa 10 minuti fino a quando i piselli sono teneri.

Togli dal fuoco e lascia raffreddare leggermente.

Trasferisci il composto nel frullatore con 60g di tofu, 15 foglie di menta, 5g di polvere proteica, aglio in polvere e sale. Frulla fino a ottenere una crema vellutata.

Riversa nuovamente in pentolino e riscalda a fuoco dolce per 2-3 minuti, mescolando bene.

Servi la minestra con una cucchiaiata di yogurt greco e qualche foglia di menta fresca per decorare.
