Preriscaldare il forno a 180°C. Preparare una teglia per muffin con pirottini di carta.

Scaldare il latte scremato a temperatura ambiente in una ciotola.

In una brocca, montare le uova intere e l'albume con il dolcificante fino a ottenere un composto spumoso (circa 2-3 minuti con le fruste).

Aggiungere il burro ammorbidito e il latte tiepido al composto di uova, mescolando delicatamente.

In una ciotola setacciare la farina integrale, la polvere proteica, il lievito e il sale.

Incorporare gli ingredienti secchi al composto umido con movimenti dolci, evitando di smontare.
