Preriscalda il forno a 180°C e prepara uno stampo per muffin con dei pirottini di carta.

In una padella antiaderente, cuoci gli spinaci a fuoco medio finché non appassiscono, quindi lascia raffreddare.

In una ciotola, sbatti l'uovo con lo yogurt greco fino a ottenere un composto omogeneo.
