Cuocere l'uovo in acqua bollente per 10 minuti, quindi raffreddarlo e sbucciarlo.

In una ciotola, mescolare la farina di avena, la ricotta light, l'olio extravergine, il sale e l'acqua fino a ottenere un impasto omogeneo.

Stendere l'impasto tra due fogli di carta forno, ritagliare un quadrato di 10x10 cm e posizionarlo in uno stampo per muffin.

Cuocere in forno preriscaldato a 190°C per 12 minuti.

Nel frattempo, preparare il ripieno tritando l'erba cipollina e mescolandola con l'uovo sodo tagliato a pezzetti, lo yogurt greco, la senape, l'aceto, il pepe e il sale.

Riempire il nido raffreddato con il ripieno e guarnire con ulteriore erba cipollina.
