Method

Preriscaldare il forno a 170°C e rivestire una placca con carta forno.

Triturare finemente le mandorle in un mixer fino a polverizzazione grossolana (non cremosa).

In una ciotola, mescolare le mandorle tritate con lo zucchero, i chiodi di garofano, la cannella e la vaniglia in polvere.

Aggiungere le proteine whey e la farina di riso integrale, mescolando bene.

In un'altra ciotola, montare leggermente i bianchi d'uovo con una forchetta, aggiungere il Marsala e il sale.

Versare il composto di bianchi sui secchi e amalgamare delicatamente con una spatola fino a ottenere un impasto omogeneo. Se troppo asciutto, aggiungere 5 ml di Marsala.

Formare bastoncini di circa 7 cm di lunghezza e 1,3 cm di diametro, posizionandoli sulla placca preparata.

Cuocere per 20-22 minuti fino a doratura della superficie.

Estrarre dal forno e raffreddare su una griglia prima di conservare in scatola ermetica.
