Sbuccia la banana e mettila in una ciotola insieme alla ricotta magra; schiaccia bene con una forchetta fino a ottenere una crema omogenea.

Aggiungi le uova intere e mescola energicamente per 2-3 minuti fino a incorporare aria nella pastella.

Versa il latte scremato e continua a mescolare.

In una ciotola a parte, setaccia la farina di farro, il cacao amaro, il lievito, il bicarbonato e il sale; unisci questi ingredienti secchi alla crema di banana e ricotta mescolando delicatamente fino a ottenere una pastella omogenea, senza far deflazionare troppo l'impasto.

Scalda una padella antiaderente o una piastra a fuoco medio-alto e unta leggermente con olio di semi.

Versa porzioni di pastella (circa 60 g per pancake) e cuoci per 2-3 minuti, finché non vedi piccole bolle sulla superficie e i bordi iniziano a dorare.

Capovolgi delicatamente il pancake e cuoci l'altro lato per 1-2 minuti fino a doratura.
