Attiva il lievito madre: sciogli 100 g di lievito madre in 150 ml di acqua tiepida (circa 37°C) insieme a 80 g di farina di segale. Mescola bene e lascia riposare in un vasetto ermetico a temperatura ambiente per 12 ore.

Prepara lo starter: macinare finemente 50 g di segale, aggiungere 80 ml di acqua tiepida (45°C), mescolare e riporre in frigorifero per una notte intera.

Crea l'impasto principale: in una ciotola grande, versa il lievitino attivato, lo starter dal frigo, 50 ml di acqua fredda, il lievito di birra sciolto in 30 ml d'acqua tiepida, la farina di segale restante (100 g), la farina di farro, i semi di girasole, i semi di lino e il sale.

Impasta energicamente a mano per 10 minuti fino a ottenere un composto omogeneo e elastico. Se troppo secco, aggiungi acqua un cucchiaio alla volta.

Trasferisci l'impasto in una ciotola oleata, copri con un canovaccio umido e lascia lievitare per 1 ora e 30 minuti a temperatura ambiente (22-24°C) fino al raddoppio del volume.

Infarinare il piano di lavoro e trasferisci l'impasto. Dividi in due porzioni uguali.

Forma due pagnotte tonde con le mani, stringendo i bordi verso il centro per creare tensione. Posizionali in uno stampo da plumcake (30x12x10 cm) rivestito di carta forno e leggermente oliat
