Method

Tritare finemente i fichi secchi e i gherigli di noci in una ciotola.

In una ciotola capiente, scogliere il lievito di birra con 100 ml di acqua tiepida e 75 g di farina integrale; lasciar riposare 10 minuti.

Aggiungere la farina integrale rimanente, la farina di canapa, l'olio, i fichi e le noci tritati, il sale e i restanti 100 ml di acqua; impastare per 8-10 minuti fino a ottenere un impasto liscio e elastico.

Formare una pagnotta, adagiarla su un foglio di carta forno e coprire con un telo umido; far lievitare in luogo tiepido per 2 ore.

Preriscaldare il forno a 200°C.

Fare 3-4 tagli sulla superficie della pagnotta con un coltello affilato.

Trasferire il pane (con la carta forno) su una placca da forno e cuocere per 40 minuti fino a doratura uniforme.

Estrarre dal forno e lasciar raffreddare completamente su una gratella prima di servire a fette.
