Method

Scaldare l'acqua a 35°C. In una ciotola mescolare la farina integrale, il lievito sbriciolato e il sale.

Aggiungere gradualmente l'acqua tiepida e gli albumi d'uovo, mescolando fino a formare un impasto omogeneo. Incorporare l'olio extravergine d'oliva e continuare a lavorare per 8-10 minuti fino a ottenere un impasto elastico.

In una padella antiaderente scaldare un filo d'olio e rosolavi brevemente i pomodorini interi fino a iniziare ad ammorbidirsi. Aggiungere origano, sale e pepe; tenere da parte.

Tagliare la mozzarella di bufala in piccoli cubetti (circa 1 cm).

Formare 8 palline di impasto (circa 50 g l'una). Praticare un incavo al centro di ogni pallina con il pollice e inserirvi delicatamente un cubetto di mozzarella e un pomodorino.

Disporre i panini su una teglia rivestita di carta forno, coprire con un canovaccio leggermente umido e far lievitare in un luogo tiepido per 45-50 minuti fino al raddoppio.

Preriscaldare il forno a 180°C. Togliere il canovaccio e cuocere i panini per 18-20 minuti fino a doratura leggera.

Sfornare e far intiepidire prima di servire.
