Method

Sciogliere il lievito di birra in 80 ml di acqua tiepida, attendere 5 minuti finché non diventa schiumoso.

In una ciotola, mescolare le farine, la farina d'orzo, i semi di lino macinati e il sale.

Versare il lievito sciolto sugli ingredienti secchi, aggiungere i 70 ml di acqua rimasti poco alla volta, mescolando fino a ottenere un impasto omogeneo e leggermente appiccicaticcio.

Trasferire l'impasto sul piano di lavoro leggermente infarinato e impastare per 8-10 minuti fino a renderlo liscio ed elastico.

Formare una palla, posizionarla in una ciotola leggermente unta, coprire con un canovaccio umido e lasciare lievitare per 3-4 ore a temperatura ambiente fino a raddoppiarsi.

Preriscaldare il forno a 200°C. Trasferire l'impasto su carta forno, dare una forma tonda e compatta, praticando piccoli tagli sulla superficie con un coltello.

Cuocere per 30 minuti a 200°C, quindi togliere dalla placca e posizionare direttamente sulla grata del forno per altri 15 minuti, fino a doratura completa.

Sfornare e far raffreddare completamente su una gratella prima di consumare.
