In una ciotola mescola 40g di farina proteica, 25g di farina di mandorle, 5g di gomma di xantano e 2g di sale.

In un'altra ciotola, sciogli 2g di lievito secco in 80ml di acqua tiepida (45°C) con 1g di eritritolo; lascia riposare 5 minuti.

Versa il composto di lievito nella farina e impasta per 3-4 minuti fino a ottenere un impasto morbido e omogeneo.

Copri e lascia lievitare a temperatura ambiente per 45 minuti.

Trasferisci su carta forno, modella un piccolo ovale (12x8cm), spolverizza leggermente di farina di mandorle e lascia riposare 20 minuti.

Inforna a 220°C per 12-15 minuti nebulizzando acqua nei primi 8 minuti, fino a doratura e suono cavo al tap sul fondo.
