Taglia il melone a pezzi, privalo dei semi e frulla il tutto fino a ottenere un purea liscia e omogenea; filtrala attraverso un colino a maglie fitte per eliminare le fibre residue.

Riscalda delicatamente la panna fresca in un pentolino a fuoco basso (non deve bollire, raggiungere max 70°C).

Versa la purea di melone nella panna calda e mescola bene; aggiungi un pizzico di sale marino e il succo di limone per esaltare i sapori.

In una ciotola, setaccia le proteine in polvere con 30 ml d'acqua tiepida, mescolando con una frusta per evitare grumi; unisci lo yogurt greco al composto.

Ammorbidisci la gelatina in un piatto con poca acqua fredda per 5 minuti; scaldala poi a bagnomaria per 1-2 minuti finché non diventa liquida e trasparente.

Aggiungi il miele acacia al composto di proteine e yogurt, poi versalo lentamente nel composto di panna e melone, mescolando con gesto deciso per incorporare aria e ottenere una textura cremosa.

Incorpora la gelatina sciolta mescolando dal basso verso l'alto per 1 minuto.

Dividi il composto in 4 coppette di vetro eleganti e riponi in frigorifero per 2,5-3 ore fino a quando la panna cotta non raggiunge una consistenza decisa ma ancora cremosa.

Poco prima di servire, decora il topping con fragole fresche tagliate a dadini; se desiderato, completa con un filo di sciroppo d'acero.
