In una ciotola ampia, unisci la ricotta fresca e le due uova intere, mescolando con una forchetta fino a ottenere un composto liscio e omogeneo.

Aggiungi il Parmigiano Reggiano grattugiato, le proteine in polvere e il pangrattato integrale; mescola energicamente per 2-3 minuti fino a che l'impasto non risulti compatto e privo di grumi.

Condisci con una generosa grattugiata di noce moscata, sale e pepe, incorporando il tutto nell'impasto.

Trasferisci l'impasto su un piano da lavoro e compattalo bene con le mani per 1 minuto.

Dividi l'impasto in 6 porzioni uguali e modellale in palle lisce; posizionale su un piatto, copri con pellicola trasparente e riponi in frigorifero per almeno 30 minuti.

Estrai le palline dal frigo e, usando uno schiacciapatate a fori larghi, premi ogni pallina direttamente nella ciotola della brodo (o nel piatto di servizio): i filamenti si formeranno naturalmente.

Taglia i passatelli con un coltello pulito ogni 4-5 cm mentre escono dallo schiacciapatate.

Versa i passatelli in brodo vegetale o di pollo a 80°C, lascia cuocere dolcemente per 8-10 minuti finché non galleggiano e rimangono sodi ma morbidi al palato.
