Preriscaldare il forno a 180°C. Rivestire una teglia con carta forno.

In una ciotola, amalgamare il burro ammorbidito con lo zucchero di canna fino a ottenere un composto cremoso e leggero (2-3 minuti con una frusta).

Aggiungere l'uovo intero e l'essenza di vaniglia, mescolando bene fino a incorporare aria.

In una seconda ciotola, setacciare insieme la farina, il cacao in polvere, le proteine in polvere, il lievito e il sale.

Versare gli ingredienti secchi nel composto cremoso alternando con il latte scremato, mescolando delicatamente con una spatola fino a formare un impasto omogeneo e non appiccicaticcio.

Avvolgere l'impasto in una pellicola trasparente e riposare in frigorifero per 15 minuti.

Stendere l'impasto tra due fogli di carta forno a uno spessore di 5 mm con un matterello.

Ricavare i biscotti usando uno stampo rotondo (diametro 8-10 cm) o a forma desiderata, adagiandoli sulla teglia preparata.

Bucare delicatamente la superficie di ogni biscotto con i rebbi di una forchetta per un aspetto tradizionale.

Cuocere in forno a 180°C per 13-15 minuti fino a quando i bordi risultano leggermente più scuri ma il centro rimane morbido.

Estrarre dal forno e lasciar raffreddare sulla teglia per 5 minuti, poi trasferire su una griglia di raffreddamento.
