In una ciotola, mescola l'acqua tiepida con il lievito e lascia riposare 5 minuti finché non si attiva.

Aggiungi la farina integrale, le proteine in polvere e il sale, mescolando con un cucchiaio di legno fino a ottenere un impasto ruvido.

Trasferisci su un piano di lavoro e impasta energicamente per 8-10 minuti fino a ottenere un impasto liscio ed elastico.

Forma una palla, mettila in una ciotola leggermente oleata, copri con un canovaccio umido e lascia lievitare in luogo tiepido per 1 ora e mezza, finché il volume raddoppia.

Dividi l'impasto in due parti uguali, forma due palline e mettile in ciotole separate. Copri e lascia riposare 30 minuti.

Preriscalda il forno a 240°C. Fodera due placche con carta da forno.

Su un piano infarinato, stendi ogni pallina premendo delicatamente dal centro verso l'esterno, formando un cerchio di circa 25 cm di diametro.

Distribuisci i pomodori pelati su ogni pizza, creando uno strato uniforme, condisci con mezzo cucchiaio di olio e un pizzico di sale.

Cuoci in forno per 10-12 minuti finché la base è dorata e croccante.

Nel frattempo, in una piccola ciotola condisci i pomodorini con il mezzo cucchiaio di olio rimasto, sale, pepe e un pizzico di origano.

Togli le pizze dal forno, distribuisci la mozzarella light e la ricotta magra a cucchiaiate, aggiungi i pomodorini conditi e decora con basilico fresco.
