Preriscaldare il forno a 175°C. Foderare uno stampo rettangolare per plumcake (20x10 cm circa) con carta da forno.

Passare la ricotta magra attraverso un colino a maglie strette per renderla omogenea e setosa.

In una ciotola, montare leggermente gli albumi con una frusta fino a renderli spumosi.

Aggiungere gradualmente la ricotta agli albumi montati, mescolando delicatamente dal basso verso l'alto per mantenere l'aria incorporata.

Incorporare la farina integrale setacciata insieme al lievito, mescolando con movimenti lenti.

Aggiungere il Parmigiano Reggiano grattugiato fresco, il pepe nero e il sale.
