In una ciotola, mescola la salsa di soia, la mela grattugiata, l'eritritolo, i cipollotti, l'olio d'oliva, l'aglio e lo zenzero fino a ottenere un composto omogeneo.

Aggiungi la carne di tacchino, le carote e le zucchine, e infine l'albume. Mescola bene fino a amalgamare tutti gli ingredienti.

Copri la ciotola con della pellicola trasparente e lascia riposare in frigorifero per 20 minuti.

Posiziona le polpettine su una teglia rivestita con carta forno e cuoci in forno preriscaldato a 200°C per 20 minuti, fino a doratura.
