Portare a ebollizione l'acqua in una pentola grande con il sale. Aggiungere il polpo intero e ridurre il fuoco: cuocere a sobbollire lentamente per 30-35 minuti finché la carne si formi facilmente con uno stuzzicadenti.

Nel frattempo, lavare gli agrumi e tagliarli a metà. Spremere delicatamente il lime e l'arancia in una ciotola, raccogliendo circa 200 ml di succo fresco.

Scolare il polpo riservando 250 ml del liquido di cottura. Lasciar raffreddare il polpo per 5 minuti, poi affettarlo in striscioline da 1 cm di spessore.

Versare il succo di agrumi appena spremuto insieme al liquido di cottura riservato in una pentola. Scaldare a fuoco basso per 2-3 minuti senza bollire, quindi lasciar intiepidire.

In una ciotola piccola, emulsionare il liquido tiepido con un frullatore a immersione versando l'olio a filo: otterrai una salsa cremosa e setosa. Aggiustare di sale e pepe.

Distribuire la rucola nei piatti da portata. Adagiare il polpo affettato sopra, aggiungere alcuni spicchi di agrumi pelati a vivo e versare la salsa intorno.

Completare con una foglia di menta fresca e servire a temperatura ambiente o leggermente tiepido.
