Preriscaldare il forno a 190°C e rivestire una teglia con carta forno.

In una ciotola, mescolare farina d'avena, proteine in polvere, sale e cannella.

In un'altra ciotola, lavorare il ghee con zucchero e miele fino a ottenere una crema leggera.

Aggiungere la scorza di limone grattugiata, l'estratto di vaniglia e i chiodi di garofano macinati, mescolare bene.

Incorporare l'uovo intero e l'albume alla crema, amalgamando delicatamente.

Unire il composto secco al composto bagnato, mescolando fino a ottenere un impasto omogeneo e compatto.
