Frantumare finemente i savoiardi integrali usando le mani o un mortaio: devono diventare una briciola uniforme.

In una ciotola mescolare la polvere di savoiardi con le proteine in polvere e il sale.

Aggiungere il mascarpone light e il caffè espresso freddo, mescolando con una spatola fino a ottenere un impasto omogeneo e compatto (circa 2-3 minuti).

Aggiungere il miele e amalgamare ancora per 1 minuto.

Prelevare un cucchiaio di impasto (circa 12-15 g), appiattirlo leggermente sul palmo della mano, inserire al centro un pezzetto di cioccolato fondente, quindi richiudere l'impasto a formare una pallina regolare.

Disporre le praline su un vassoio rivestito di carta forno, mantenendo 2 cm di distanza una dall'altra.
