In una ciotola capiente, versa l'acqua tiepida e aggiungi gradualmente le farine di grano saraceno e d'avena, mescolando con una spatola fino a ottenere un impasto omogeneo e leggermente appiccicaticcio.

Incorpora il burro chiarificato e il miele, continuando a mescolare per 2-3 minuti finché il composto non diventa elastico.

Aggiungi il sale marino e il bicarbonato, mescolando delicatamente per altri 30 secondi.

Trasferisci l'impasto su un piano di lavoro leggermente infarinato e lascialo riposare per 5 minuti coperto con un panno umido.
