Method

Versare il latte intero in una pentola grande e scaldarlo lentamente fino a 37°C, controllando con un termometro da cucina.

Aggiungere il succo di limone fresco versandolo lentamente mentre mescolate continuamente per 2 minuti: vedrete il latte iniziare a separarsi in siero e cagliata.

Aggiungere il fermento lattico (potete usare dello yogurt naturale) e mescolare delicatamente per 1 minuto.

Coprire la pentola con un canovaccio pulito e lasciar riposare a temperatura ambiente (20-22°C) per 12 ore: durante questo tempo la cagliata diventerà più compatta e il sapore più acido.

Dopo 12 ore, foderare un colino fine con la garza alimentare e versarvi delicatamente il composto cagliato.

Lasciar sgocciolare il siero per almeno 3-4 ore (potete anche appendere la garza legandola a un mestolo posizionato su una ciotola per accelerare lo scolo).

Raccogliere la cagliata dalla garza e trasferirla in un contenitore di vetro con coperchio.

Regolare di sale secondo il vostro gusto e conservare in frigorifero fino a 5 giorni.
