Preriscaldare il forno a 180°C. Stendere la pasta sfoglia integrale su una carta forno e adagiarla in uno stampo per crostata di 24 cm di diametro, sollevando leggermente i bordi. Bucherellare il fondo con una forchetta e lasciare riposare in frigorifero per 10 minuti.

Pelate le pere, affettarle sottilmente e disporle sulla base della pasta in modo ordinato.

In una ciotola, schiacciare il gorgonzola con una forchetta fino a renderlo cremoso. Aggiungere la ricotta e amalgamare bene.

In un'altra ciotola, sbattere l'uovo intero con gli albumi fino a ottenere un composto omogeneo e leggermente schiumoso.

Unire alle ricotta-gorgonzola l'uovo sbattuto, il Parmigiano Reggiano, l'erba cipollina tritata, il sale, il pepe e la noce moscata. Mescolare delicatamente fino a incorporare tutti gli ingredienti.

Versare il ripieno sulla base di pasta e pere, distribuendo uniformemente.

Infornare per 32-35 minuti, fino a quando la superficie risulta dorata e il centro appena leggermente tremolante al tatto.

Estrarre dal forno e far intiepidire per 5 minuti prima di tagliare. Servire a fette tiepide o a temperatura ambiente.
