Method

Preparare la base: mescolare farina integrale, un uovo, 30 ml di latte scremato, 20 g di parmigiano, olio, cremor tartaro e sale. Impastare fino a ottenere un panetto compatto, avvolgere in pellicola e riposare in frigorifero 30 minuti.

Nel frattempo preparare le verdure: tagliare il sedano rapa a fette sottili, la cipolla in fettine e la verza in strisce. Cuocerle in padella antiaderente con mezzo cucchiaio di olio a fuoco medio per 10 minuti fino a ammorbidirsi, salando e pepando.

Trasferire le verdure in una ciotola e lasciar raffreddare leggermente.

Preriscaldare il forno a 180°C.

Stendere l'impasto tra due fogli di carta forno fino a uno spessore di 3-4 mm e trasferirlo in una tortiera antiaderente di 25 cm di diametro.

Rialzare i bordi di circa 4 cm e distribuire il sedano rapa cotto sulla base.

Tagliare il salmone affumicato in piccoli pezzi e distribuire sulla verdura.

Preparare il ripieno: frullare insieme aneto, prezzemolo, due uova intere, ricotta magra, 150 ml di latte scremato, 10 g di parmigiano, noce moscata e pepe. Versare il composto sulla verdura e sul salmone.

Spolverizzare con semi di sesamo.

Cuocere in forno a 180°C per 40 minuti fino a quando la quiche risulta dorata e il ripieno completamente assestato.

Estrarre dal forno e servire tiepida, tagliata a spicchi.
