Method

Lava, sbuccia e rimuovi il torsolo delle mele cotogne, quindi tagliale a pezzi grossi.

Metti i pezzi di mela in una pentola capiente e aggiungi il succo e la scorza di limone, la cannella e un pizzico di sale.

Copri le mele con acqua e porta a ebollizione. Cuoci a fuoco medio per circa 30-40 minuti, finché non diventano tenere.

Scola le mele, conservando un po' dell'acqua di cottura. Frulla le mele cotogne con un frullatore ad immersione fino ad ottenere una purea omogenea.

Rimetti la purea di mela nella pentola, aggiungi l'eritritolo e mescola bene. Cuoci a fuoco basso, mescolando frequentemente, finché non si addensa e assume un colore arancione intenso, circa 60-70 minuti.

Versa la pasta di mele in una teglia rivestita di carta forno, livellando bene.

Lascia raffreddare a temperatura ambiente e poi metti in forno a 50°C per circa 1 ora per asciugare ulteriormente.

Una volta fredda, taglia a pezzi e conserva in un contenitore ermetico in frigorifero.
