In una padella, scalda l'olio extravergine d'oliva a fuoco medio. Aggiungi la cipolla tritata e cuoci fino a quando non diventa traslucida, circa 5 minuti.

Unisci i funghi affettati e l'aglio, mescolando fino a quando i funghi sono teneri, circa 5 minuti. Aggiungi sale e pepe a piacere. Trasferisci il composto in una ciotola.

Nella stessa padella, aggiungi gli spinaci e cuocili fino a quando non si appassiscono, circa 3-4 minuti. Regola di sale e pepe. Trasferisci in un'altra ciotola.

Preriscalda il forno a 180°C. Fodera una teglia con carta da forno.

Stendi un foglio di pasta sfoglia su un piano infarinato e distribuisci il composto di cipolla e funghi al centro, lasciando un bordo di 2 cm.

Posiziona il salmone sui funghi e spolvera con paprika. Copri con gli spinaci cotti.

Copri con il secondo foglio di pasta sfoglia, ripiega i bordi e sigilla bene. Spennella la superficie con il tuorlo d'uovo.

Inforna per circa 25 minuti, finché la pasta non è dorata. Lascia raffreddare per qualche minuto prima di affettare e servire.
