Method

In una ciotola, mescola l'acqua, il vino rosso, l'aceto, la cipolla, il limone, l'aglio, i chiodi di garofano, la foglia d'alloro, le bacche di ginepro e i grani di pepe.

Immergi il petto di pollo nella marinata e lascia riposare in frigorifero per almeno 2 ore.

Scola il pollo dalla marinata e filtra il liquido.

In una padella antiaderente, rosola il pollo per 2-3 minuti per lato fino a doratura.

Aggiungi 100ml di marinata filtrata e le carote e il sedano. Copri e cuoci a fuoco lento per 15-20 minuti.

Trasferisci il pollo su un piatto. Riduci il liquido di cottura a fuoco vivo e aggiungi le mandorle macinate, mescolando per 1-2 minuti finché non si addensa.
