Versare la farina integrale in una ciotola capiente, aggiungere l'acqua tiepida, l'olio extravergine e il sale. Impastare con le mani fino a ottenere un panetto liscio e omogeneo (circa 3-4 minuti).

Coprire l'impasto con pellicola trasparente e riposare in frigorifero per 30 minuti.

Preriscaldare il forno a 220°C in modalità ventilata e foderare una placca con carta forno.

Spianare l'impasto direttamente sulla carta forno con le mani bagnate, formando un rettangolo di circa 28x20 cm, dello spessore di 1,5 cm.

Lavare i peperoni, tagliarli a strisce sottili, e distribuirli uniformemente.

Tagliare i pomodori datterini a metà e spargerli sulla schiacciata.

Distribuire le olive taggiasche e cosparger con ricotta salata grattugiata.

Cuocere in forno per 18-20 minuti fino a quando il bordo non diventa dorato e croccante.
